The Lombard Quartirolo is a denomination of protected origin cheese (DOP).
The Decree of recognition has been published on date 12/08/1993 nr.196 on the "Gazzetta Ufficiale".

The Quartirolo cheese

Each Lombard Quartirolo cheese has a weight from 1,7 to 3.5 kg depending on technical conditions of production.
The cheese has a parallelepiped-quadrangular shape; its edges are 18-22 cm.
Its paste is white, uniform and compact.
Its taste is sweet, just a little sour and aromatic.
The mature Lombard Quartirolo if it is seasoned for at least 30 days: has a thin rose rind.
The surface of the Lombard Quartirolo cheese has the DOP mark, in order to guarantee that the cheese is conforming to the technical standards.

Some parts of the mark are visible even that the Lombard Quartirolo is sold in portions.
The DOP mark must be visible on the package on sale.
