The Lombard Quartirolo is a denomination of protected origin cheese (DOP).
The Decree of recognition has been published on date 12/08/1993 nr.196 on the "Gazzetta Ufficiale".

Sweet and sour salad with fresh Lombard Quartirolo

 

Ingredients for 4 persons

4 slices of fresh Lombard Quartirolo, 2 green apples, 1 orange, 50 g. of sugar, 1 clove, 1 head of curly endive, a bit of grated cinnamon, extra vergine olive oil q.s., balsamic vinegar (sweet & sour vinegar aged in wood barrels) q.s. salt and pepper q.s.

 

How to prepare it


Wash and clean the curly endive. Prepare the sugar in a saucepan. Melt it and candy it; add the orange juice and finish the cookin for 2 minutes. Wash and peel the apples. Add them to the candied sugar with the orange, the clove and the cook for another 2 minutes. Cut the fresh Lombard Quartirolo; place it on one side of the plate. Dress the salad with oil, balsamic vinegar, salt and pepper. Sprinkle with cinnamon. Serve.
