Ingredients for 4 persons
250 g. of semi-fine rice, 1/2 glass of red wine, 4 slices of matured Lombard Quartirolo, 1/2 l. of vegetable stock, 1 eschalon, extra vergine olive oil q.s., minced parsley, salt and pepper q.s. |

How to prepare it
Prepare the onions and herbs in a saucepan slightly fried in oil with the escalon and 3 tablespoons of extra vergine olive oil. Put the ricew in the saucepan. Toast it and soak it qith 1/2 a glass of red wine. Grill the matured Lombard Quartirolo in a grill. Finish the cooking of the rice soaked with the stock for 18 minutes and add the parsley at the end. Pour the rice on the plate, and place the slices of grilled Lombard Quartirolo over it. Serve.
