Ingredients for 4 persons:
4 calf titbits of 120gr each, 4 slices of Italian ham , 200gr of fresh Lombard Quartirolo, 4 celery hearts, 1 glass of meat consommé, a glass of brown sauce, half glass of white wine, 60gr of butter salt and pepper. |

How to prepare it
Liquefy the 20gr of butter in a pan and put in it the titbits with salt and pepper for a few times. Leave them in a part and add to their sauce the wine and stir well with a wooden spoon add 20gr of butter in little pieces, salt and pepper and brown sauce. Lay on each titbit a slice of ham and grind Quartirolo, put them in oven at 180° degree centigrade until the Lombard Quartirolo met. In a pan stow the celery with 20gr of butter with a little consommé. Serve the titbits with their sauce and the celery.
