Soles, asparagus and Lombard Quartirolo salad

The Lombard Quartirolo is a denomination of protected origin cheese (DOP).
The Decree of recognition has been published on date 12/08/1993 nr.196 on the "Gazzetta Ufficiale".


Marrow pudding

For a light and fresh course, season vegetables and Lombard Quartirolo.

Ingredients for 4 persons:

300gr of marrow, 100gr of leek, 30gr of butter, 40gr of white wine, 5 eggs, 400gr of fresh Lombard Quartirolo, parsley, salt.

 

How to prepare it


Cut the leeks and marrows thin and fry them gently in the butter. Stir well for some minutes, put salt and white wine and cover the pan for 5 minutes. Then beat the eggs with a little salt. Mix well the Quartirolo and the vegetables until creamy. Spread with butter 4 soufflé Pyrex and pour the cream. Cook in oven in a large pan with water the 4 Pyrex for about 40 minutes. Let cool before leaving the pudding from their Pyrex. Serve with fresh tomato sauce olive oil and basil. You may change marrow with asparagus.
