The Lombard Quartirolo is a denomination of protected origin cheese (DOP).
The Decree of recognition has been published on date 12/08/1993 nr.196 on the "Gazzetta Ufficiale".

Ingredients for 4 persons:

350gr of fresh Lombard Quartirolo, one vegetable cube, 60gr of French beans, 4 asparagus one medium carrot, one marrow, 4 spoons of olive oil, chive.

 

How to prepare it


Prepare the consommé with a litre of water and one cube, boil in it the vegetables cut into small sticks.
Leave them from water. Mix well the Quartirolo with the consommé and the chive. Pour the soup in plates with a decoration of some vegetables and a little oil and chilly pepper powder. You can taste it hot or cold.
