Ingredients for 4 persons:
300 gr. of Lombard Quartirolo, 100gr of grind bread, 16 medium capesante, 16 trifle slices, 3 eggs, 150 gr. dressed salad, frying olive oil, salt and pepper. |

How to prepare it
Wash the "capesante" keeping the white side only. Cut the Lombard Quartirolo round and 5mm thick. Alternate in a skewers capesante, Quartirolo and trifle. Put the eggs in a plate and then beat them with salt and pepper. Wet the skewers with the eggs and then cover them by grind bread (remove the excess) then fry them in a very hot olive oil. After cooking lay the skewers on an absorbent paper. Serve hot with salad garniture.
