Ingredients for 4 persons:
200gr of fresh Lombard Quartirolo, 16 sole fillets, 12 asparagus, 40 cooked and shelled hen clams, 150gr of curled salad, 2, ½ glasses of olive oil, the juice of 1 lemon, chervil, salt and pepper. |

How to prepare it
Boil the asparagus in water. After put them in cool water and ice. Cut them eliminating the wooden parts. Put the Lombard Quartirolo in the mixer with oil and lemon mix well. Cut the sole fillets and steam cook them. Dress the salad, lay on the asparagus the soles and the hen clams with a little Lombard Quartirolo sauce and chervil, ready to serve.
