Ingredients for 4 persons:
400gr of fresh Lombard Quartirolo, 800gr of fresh tomatoes, 2 cucumbers, 6 basil leaves, 2 vinegar spoons full, 4 Tabasco drops, 1 clove of garlic, 250gr of vegetable consommé, salt. |

How to prepare it
Boil for one minute the tomatoes and peel, cut, and leave the seeds them off. Peel the cucumbers and leave their seeds. Cut the vegetables and put them in the mixer. Add the consommé and the vinegar and mix well. If it is necessary add some more consommé. Add salt and Tabasco spread the garlic on the plates and pour the soup with some Quartirolo cubes in it. Add oil and basil.
