6 crêpes, 200 g. of matured Lombard Quartirolo, 100 g. of Tyrolese smoked ham, 100 g. of butter, luquid cream, Rubra sauce. |

How to prepare it
Place six thin crêpes having a diameter of 12-13 cm on a working table. Dice the Tyrolese smoked ham and the matured Lombard Quartirolo. Put the dice in the middle of the crêpe and fold it in a triangle. Place the crêpe in a buttered oven-proof dish. Prepare the cream by making it pink with the Rubra sauce and cover each crêpe with a tablespoon of this sauce. Add the butter flakes and sprinkle with the parmesan. Place the oven-proof dish in a moist average hot oven. (To moist the oven, place a bowl of water in it).
