Ingredients for 4 persons:
200 gr of albumen, 200 gr of sugar, 200 gr of cream, 10 gr of white trifle, 200 gr of fresh Lombard Quartirolo, 1 spoon full of milk, 5 jelly sheets.

How to prepare it
Cut the Quartirolo in cubes and put it in the mixer with milk, shake well until creamy. Beat the albumen with sugar in order to obtain a smooth sponge. Beat the cream and trifle together. Liquefy jelly in a little hot water after a 15 minutes soaking in cold water. Join the Quartirolo cream with albumen, cream and jelly and stir gently. Put it in 8 little bowls and store in the refrigerator. Serve with cream and honey sauce and a cinnamon powder.
