Ingredients for 6 persons
500 g. of short pasta squills, 350 g. of matured Lombard Quartirolo, 50 g. of butter, 2 glasses of extra vergine olive oil, 50 g of low-fat yoghurt, 4 ripe tomatoes, 2 glasses of milk, 1 bunch of chives. |

How to prepare it
Melt the Lombard Quartirolo in small pieces in a glass bowl with the yoghurt, milk and chives for half an hour. Melt the butter in a saucepan. Add the cheese sauce of the bowl and the pasta previously cooked slightly underdone. Mix carefully with a wooden ladle. Then add the peeled and stripped tomatoes and the olive oil. Decorate with tiny cubes of Lombard Quartirolo and tomato roses.
