The Lombard Quartirolo is a denomination of protected origin cheese (DOP).
The Decree of recognition has been published on date 12/08/1993 nr.196 on the "Gazzetta Ufficiale".

A sophisticated and delicious course, with the Lombard Quartirolo.

Ingredients for 4 persons:

A frozen puff pastry, 300gr of fresh Lombard Quartirolo, 3 eggs, 70gr of bacon, a spoon of grind parsley, 2 leeks, 30gr of butter.

 

How to prepare it


Lay down the puff pastry in Pyrex of 20cm diameter. Stir well with a fork a Quartirolo cheese until creamy. Fry gently the leeks with butter salt a little water for 10 minutes. Beat the eggs with salt, Quartirolo, parsley, leeks and the minced bacon. Stir well and pour it on the paste. Put in hot oven for 20 minutes. Let it cool before eating.
